SMART RICE COOKER KU RCDP3003 RECIPES – Arroz Caldo | KÜ KÜCHEN GERMANY

Arroz Caldo is a classic Filipino chicken rice porridge known for its warm, comforting texture and fragrant combination of ginger, garlic, onion and fish sauce. It is commonly finished with boiled egg, green onions, toasted garlic and calamansi, making it a satisfying choice for breakfast, merienda or a light family meal.

In this edition of SMART RICE COOKER KU RCDP3003 RECIPES, we prepare homemade Chicken Arroz Caldo using the KÜ KÜCHEN Smart Rice Cooker KU RCDP3003.

With a dedicated Thick Porridge mode, 4L capacity, 800W heating system and Dual-Sensor temperature control, the KU RCDP3003 provides a convenient way to slowly soften the rice while maintaining the rich, creamy consistency that defines a good bowl of Arroz Caldo.

Ingredients for Chicken Arroz Caldo

For approximately 4–6 servings, prepare:

  • 800 g chicken, preferably bone-in thighs or drumsticks
  • 1 cup uncooked rice
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 40–50 g fresh ginger, peeled and julienned
  • 2 tablespoons fish sauce
  • 1 tablespoon cooking oil
  • 1.4–1.5 liters chicken broth or water
  • Salt, to taste
  • Ground black pepper, to taste

For serving:

  • 3 hard-boiled eggs, halved
  • 3–4 tablespoons fried garlic
  • ¼ cup chopped spring onions
  • 4–6 calamansi, cut in half
  • Extra fish sauce, optional

Traditional Filipino recipes commonly use fresh ginger generously because it is one of the defining flavors of Arroz Caldo. Bone-in chicken is also a useful choice for developing a richer broth.

Step 1: Prepare the Ingredients

Rinse the rice briefly and drain well.

Peel and finely chop the onion and garlic. Cut the ginger into thin strips.

Trim excess fat from the chicken and divide larger pieces if necessary.

For a thicker Arroz Caldo, regular long-grain rice works well. A mixture of regular rice and a small amount of glutinous rice can also be used if you prefer an even richer, stickier texture. Panlasang Pinoy, for example, uses a combination of jasmine rice and sweet rice in one version of the dish.

Step 2: Sauté the Aromatics and Chicken

For the most traditional depth of flavor, heat 1 tablespoon of cooking oil in a pan.

Add the onion, garlic and fresh ginger.

Sauté for approximately 2–3 minutes, until fragrant and the onion begins to soften.

Add the chicken and cook for several minutes until the outside is lightly browned.

Pour in 2 tablespoons of fish sauce and stir for another 1–2 minutes.

Traditional stovetop Arroz Caldo recipes build their flavor in essentially this order: aromatics first, followed by chicken, fish sauce and rice before the liquid is added.

Step 3: Add Rice

Add the drained rice to the pan containing the chicken and aromatics.

Stir for approximately 1 minute, allowing the grains to become lightly coated with the flavorful mixture.

This short step helps the rice absorb the chicken, ginger and fish sauce flavors before the porridge cooking stage.

Transfer everything into the Nano-Ceramic coated cast-iron inner pot of the KÜ KÜCHEN KU RCDP3003.

The ceramic-coated pot is particularly suitable for porridge and soup recipes because of its heat-retention characteristics and stable heat distribution.

Step 4: Add the Broth

Pour approximately 1.4–1.5 liters of chicken broth or water into the inner pot.

Stir gently to distribute the rice and chicken evenly.

Do not fill beyond the maximum level indicated inside the rice cooker.

For a richer flavor, use unsalted or lightly salted chicken broth. If using commercially prepared broth, adjust the amount of fish sauce and salt accordingly.

Step 5: Select Thick Porridge Mode

Close the lid securely and select:

Cooking Mode: Thick Porridge

Allow the KÜ KÜCHEN KU RCDP3003 to complete its programmed cooking cycle.

The rice needs time to absorb liquid, expand and gradually release starch into the broth. This is what creates the characteristic creamy consistency of Arroz Caldo.

Traditional stovetop versions generally simmer until the grains are very soft and the liquid has noticeably thickened.

With the KU RCDP3003, the dedicated porridge program handles the temperature-management stage automatically, while the Dual-Sensor system monitors temperature from both the bottom and upper section of the cooking chamber.

Step 6: Check the Consistency

When the cooking program is complete, open the lid carefully and stir the Arroz Caldo.

The finished porridge should be thick and creamy while still containing enough broth to remain spoonable.

If it is thicker than desired, add a small amount of hot chicken broth or hot water and stir until you reach the preferred consistency.

If you prefer it thicker, allow it to rest in the rice cooker for several minutes.

Arroz Caldo naturally thickens as the rice continues absorbing liquid, especially as it cools.

Taste and season with additional fish sauce, salt and freshly ground black pepper if necessary.

Step 7: Prepare the Traditional Toppings

While the Arroz Caldo is cooking, prepare the toppings.

Boil the eggs until fully cooked, peel them and cut each egg in half.

Prepare crispy fried garlic by slowly cooking finely chopped garlic in a small amount of oil until golden.

Chop the spring onions and cut the calamansi in half.

These toppings are not merely decorative. They create the contrast that makes Arroz Caldo particularly satisfying: creamy rice porridge, savory chicken, crisp garlic, fresh spring onion and bright acidity from calamansi.

Step 8: Serve the Arroz Caldo

Ladle the hot Arroz Caldo into individual bowls.

Top each serving with:

  • Half a boiled egg
  • Fried garlic
  • Chopped spring onions
  • Ground black pepper

Serve with calamansi and fish sauce on the side.

Squeeze fresh calamansi over the bowl just before eating for the familiar citrus note commonly paired with Filipino Arroz Caldo.

Why Make Arroz Caldo with the KU RCDP3003?

The KÜ KÜCHEN Smart Rice Cooker KU RCDP3003 is designed for more than cooking everyday rice.

Its 10 specialized cooking programs include both Thick Porridge and Thin Porridge settings, allowing the cooking process to be adapted to different rice-based dishes.

For Arroz Caldo, the Thick Porridge mode is particularly appropriate because the aim is to achieve softened rice suspended in a rich, substantial broth rather than a thin rice soup.

The 4L capacity also makes it practical for preparing a family-sized portion in one batch.

Meanwhile, the 800W heating system, concave heating plate and Dual-Sensor temperature control support stable heating throughout the cooking process.

Nano-Ceramic Inner Pot for Porridge Cooking

The KU RCDP3003 includes two different inner pots, but the Nano-Ceramic coated cast-iron pot is the preferred option for this recipe.

Its heat-retention properties are suited to recipes that require gradual cooking and stable temperatures, including:

  • Thick porridge
  • Thin porridge
  • Soup
  • Clay-pot style rice
  • Everyday rice dishes

The coated surface also makes cleanup easier after cooking thick rice-based dishes such as Arroz Caldo.

Easy Filipino Comfort Food for the Whole Family

Arroz Caldo is built from very simple ingredients, but the combination of chicken, rice, fresh ginger, garlic, fish sauce and calamansi produces a dish with unmistakable Filipino character.

Preparing the aromatics and chicken first develops the traditional savory base, while the KÜ KÜCHEN KU RCDP3003 takes care of the longer porridge-cooking stage.

The result is a warm bowl of creamy rice porridge with tender chicken, aromatic ginger and the contrasting flavors of crispy garlic, egg, spring onion and fresh calamansi.
