SMART RICE COOKER KU RCDP3003 RECIPES – Beef Mechado | KÜ KÜCHEN GERMANY

Beef Mechado is a classic Filipino beef stew featuring tender chunks of beef slowly cooked in a rich tomato-based sauce with soy sauce, citrus, potatoes and vegetables.

Traditional versions of the dish use beef chuck or similar braising cuts and cook them slowly until tender. Modern Beef Mechado commonly includes potatoes, carrots and bell peppers, while calamansi or lemon provides the distinctive savory-tangy balance of the sauce.

In this edition of SMART RICE COOKER KU RCDP3003 RECIPES, we adapt this Filipino favorite for the KÜ KÜCHEN Smart Rice Cooker KU RCDP3003, using its Soup mode, 4L capacity and Nano-Ceramic inner pot for a convenient slow-cooking process.

Ingredients for Beef Mechado

For approximately 4–6 servings, prepare:

  • 800 g beef chuck, cut into 4–5 cm cubes
  • 2 medium potatoes, cut into large cubes
  • 1 large carrot, cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 medium onion, chopped
  • 4–5 cloves garlic, minced
  • 200–250 ml tomato sauce
  • 500 ml beef broth
  • 60 ml soy sauce
  • Juice of 4–5 calamansi, or about 2 tablespoons lemon juice
  • 2 bay leaves
  • 2 tablespoons cooking oil
  • ½ teaspoon ground black pepper
  • Salt, as needed

Beef chuck is particularly suitable because long, gentle cooking helps break down its connective tissue and produce a tender texture. Traditional Mechado recipes generally braise the beef for around 1½–2 hours, depending on the cut and size of the pieces.

Step 1: Marinate the Beef

Place the beef in a bowl.

Add:

  • Soy sauce
  • Calamansi or lemon juice
  • Ground black pepper

Mix until all the beef pieces are evenly coated.

Cover and marinate for at least 30 minutes. For deeper flavor, the beef can be refrigerated for 2–3 hours before cooking.

Marinating beef with soy sauce and citrus is also used in established Filipino Mechado preparations to help build flavor before braising.

Step 2: Brown the Potatoes and Carrots

Heat about 1 tablespoon of cooking oil in a frying pan.

Add the potatoes and carrots and cook briefly until their surfaces begin to turn lightly golden.

They do not need to be fully cooked at this stage.

Remove them from the pan and set aside.

Lightly browning the vegetables before adding them to the stew helps them maintain their shape during the later stages of cooking. This technique is also used in traditional Mechado preparation.

Step 3: Sauté the Aromatics and Beef

Add the remaining cooking oil to the same pan.

Sauté the onion and garlic until fragrant and slightly softened.

Add the marinated beef and cook for approximately 3–5 minutes, turning the pieces until lightly browned on the outside.

Browning the beef before slow cooking develops a deeper savory flavor in the finished sauce.

Do not discard the remaining marinade.

Step 4: Transfer Everything to the KU RCDP3003

For Beef Mechado, use the Nano-Ceramic coated cast-iron inner pot of the KÜ KÜCHEN KU RCDP3003.

Transfer the browned beef, onion and garlic into the inner pot.

Add:

  • Remaining marinade
  • Tomato sauce
  • Beef broth
  • Bay leaves

Stir gently until evenly combined.

The liquid does not need to completely cover the beef, but there should be enough moisture for a slow braising process.

Step 5: Select Soup Mode

Place the inner pot into the KÜ KÜCHEN KU RCDP3003, close the lid securely and select:

Cooking Mode: Soup

Allow the beef to cook gently until it begins to become tender.

The KU RCDP3003’s Dual-Sensor temperature system monitors heat from both the base and upper section of the cooker, while the concave heating plate supports more consistent heat transfer around the inner pot.

Since the exact tenderizing time varies according to the beef cut and cube size, check the meat after the initial cooking cycle. Beef chuck traditionally requires around 1½–2 hours of gentle braising to become properly tender. If necessary, continue the Soup program according to the appliance instructions until a fork can enter the beef easily.

Step 6: Add the Potatoes and Carrots

When the beef is nearly tender, add the browned potatoes and carrots.

Stir carefully so the vegetables are coated in the tomato sauce.

Continue cooking until:

  • The potatoes are tender
  • The carrots are cooked through
  • The beef can be easily pierced with a fork

Adding the vegetables later prevents them from overcooking during the long beef-tenderizing stage.

Step 7: Add the Bell Peppers

Add the red and green bell peppers during the final stage of cooking.

Continue cooking for approximately 5–8 minutes, or until the peppers have softened slightly while retaining some texture.

Traditional recipes also add bell peppers toward the end rather than cooking them for the full braising period.

Step 8: Adjust the Sauce

Open the lid and stir the Beef Mechado gently.

The sauce should be rich and slightly thick rather than watery.

If the sauce is too thick, add a small amount of hot beef broth.

If it is thinner than preferred, continue cooking briefly with the lid open where permitted by the appliance instructions until some of the liquid reduces.

Taste and adjust with:

  • Salt
  • Ground black pepper
  • A small amount of soy sauce, if needed

Be careful with additional salt because the soy sauce and beef broth may already provide enough seasoning.

Step 9: Rest and Serve

Allow the finished Beef Mechado to rest for around 5–10 minutes before serving.

Transfer to a large serving bowl and spoon plenty of the tomato-based sauce over the beef and vegetables.

Serve hot with:

  • Steamed white rice
  • Garlic rice
  • Fresh calamansi, optional

The rich tomato gravy pairs particularly well with hot rice, which is also the traditional serving style for Beef Mechado.

What Makes a Good Beef Mechado?

The most important part of Beef Mechado is not simply getting the ingredients into the pot. The beef needs enough time to become genuinely tender.

Low and slow cooking allows tougher cuts such as beef chuck to soften gradually, while the tomato sauce, soy sauce, citrus and aromatics develop into a rich savory gravy. Rushing this stage can leave the meat tough even when the vegetables are already cooked.

The finished dish should have:

Tender beef: Soft enough to cut easily but not falling completely apart.

Rich tomato sauce: Savory with gentle acidity from calamansi or lemon.

Intact vegetables: Potatoes and carrots should be tender without becoming mushy.

Fresh bell pepper flavor: Adding peppers near the end keeps their color and texture.

Why Make Beef Mechado with the KU RCDP3003?

The KÜ KÜCHEN Smart Rice Cooker KU RCDP3003 is designed for considerably more than everyday rice cooking.

Among its 10 dedicated cooking programs, the Soup function makes the appliance particularly useful for dishes that need prolonged, stable heating, such as Beef Mechado.

For this recipe, the Nano-Ceramic coated cast-iron inner pot is the preferred choice because of its heat-retention characteristics and suitability for soups and slow-cooked dishes.

The 4L capacity also provides enough space for a family-sized batch containing beef, sauce and vegetables.

Meanwhile, the combination of the 800W heating system, concave heating plate and Dual-Sensor temperature control supports stable cooking throughout the process.

Two Inner Pots for More Flexible Cooking

The KU RCDP3003 includes both:

  • Nano-Ceramic coated cast-iron inner pot
  • Three-layer SUS 304 stainless-steel inner pot

For Beef Mechado, the Nano-Ceramic pot is particularly suitable because the dish requires sustained heat for tenderizing the beef and slowly developing its sauce.

The stainless-steel inner pot, meanwhile, can be reserved for other functions such as steaming, baking or low-sugar rice preparation.

Having two dedicated inner pots allows the KU RCDP3003 to handle a much broader range of recipes without forcing every dish into the same cooking method. A surprisingly sensible idea from humanity’s ongoing campaign to fill kitchen cabinets with fewer objects. 😌

A Filipino Comfort Food Made More Convenient

Beef Mechado is built around a simple principle: give the beef enough time, and let the sauce do the work.

Beef chuck, tomato sauce, soy sauce, calamansi, garlic and bay leaves create a deeply savory base, while potatoes, carrots and bell peppers turn it into a complete family dish.

Using the KÜ KÜCHEN KU RCDP3003, the long simmering stage can be handled with the Soup program, reducing the amount of continuous stovetop attention required while still preserving the essential slow-cooked character of traditional Mechado.
